Theoretical and practical approach to the dealcoholization of water-ethanol mixtures and red wine by osmotic distillation

Osmotic distillation (OD) has been a subject of interest during the last few years due to its promising application in production low alcohol strength wines. This work focuses on partial dealcoholization (-3 v/v%) red wine (tempranillo) by OD, carrying out an experimental and theoretical process analysis. The was performed using polypropylene hollow fiber module at different conditions whose influence ethanol behavior evaluated. At best tested conditions, study other five alcohols (both aliphatic aromatic) as function their volatility (Henry’s constant) interaction with membrane (in terms Hansen solubility parameters) validated model proposed. As result, transport resistance expression that includes alcohol-membrane successfully developed. allowed reduce error between concentrations relatively wide range working conditions.
